Season the meat with fleur de sel and freshly ground black pepper.

Sear/Grill: Heat olive oil in a pan until very hot. Sear the meat for 1–2 minutes on each side to achieve light coloring — perfect for rosé (rare).

Finish in the Oven: Transfer to a preheated oven and cook for a few minutes more, depending on your preferred doneness.

Sauce: Reheat the prepared sauce in simmering water for 5 minutes. Ready to serve!
